Taco Stew

Taco Stew

This recipe has been around for a long time.
 I just made some today and thought I would share it.
It's so easy!!!

Brown hamburger meat and drain off any fat...

Add spices: salt, pepper, package of Taco Seasoning Mix
Onion Powder, and Basil while meat is cooking

Place meat in a large pot and
Add canned goods to pot and add meat!
Kidney beans, Whole kernel corn, Chilies,
Diced tomatoes, pinto beans, or black beans,
or even homomy.
(anything u like)
Do not drain liquid off of cans.


Heat on medium low for about 20 minutes ~!
WA LA!!!

Seasoned Chicken w/ Veggies

Poultry Seasoned Chicken w/ Veggies

Something I just threw together!


Start w/ chicken pieces. I like to use chicken pieces (usually leg n thigh)
 that still have the bone in them b/c it gives them added
flavor and nutrients. I do take off most of the skin and fat, but leave a little fat
remaining around the edges for flavoring and oils.



Seasonings Used: Salt, Pepper, Poultry Seasoning, and Basil Leaves


Veggies used: Celery, Green Bell Pepper,  Roma Tomato, Purple Onion,
Red Bell Pepper, Pablano Pepper


Slice veggies into rings and pieces. Place on chicken. Add 4 or 5 pats of real butter,
and sprinkle again with more poultry seasoning!

Bake @ 350 for one hour.

BBQ Pork Pot Roast

Crock Pot Recipe

This is very easy! (That's one reason I like it!)

Brown pork roast in extra~virgin olive oil on all sides in skillet



Put in crock pot w/ one cup of water in the bottom

Place slided onion and BBQ sauce on top



Cook 4 hours on high setting, then 2 hours on low setting of crock pot.


MmMmMmMm Good!!!



Gluten Free Jazzy Cornbread

Gluten ~ Free Jazzy Cornbread

Ingredients needed:
 1 Cup Gluten~ Free Yellow Corn Meal 
1Cup Gluten~ Free All Purpose Baking Mix
1Tb baking powder
1/2 t salt


2 eggs
 2 Tb Honey
3/4 to 1 C milk
3 Tb Olive Oil
1 C onion
1 can of chilies

Add bacon chips!



Add ingredients together and bake @ 400 degrees for 25 minutes
in an 8 x 8 pan!!!

Cowboy Stew and Gluten Free Cornbread

Cowboy Soup
Easy...Simple... Fast!

Brown stew meat
 in pan w/ celery salt and pepper


In pot put 1 can of corn, 3 C of water and 2 beef bouillons.
Bring to boil.
Add chopped potatoes, carrots, and onion.

Add onion salt and basil to taste.
Cook on stove top for 20 minutes or
until carrots n potatoes are tender!



Serve w/ gluten~free Jazzy Cornbread!


Boot~Kicken' Good!!!

Gluten~Free Drop Biscuits

This recipe is easy and quick!


Ingredients needed:
2 C Gluten~Free all purpose mix
1 ts baking powder
1 ts salt
3/4 ts baking soda

6 Tb real butter
1 C milk or buttermilk

1 egg


Step #1
Fold dry ingredients together



Step #2
Cut up butter into small pieces. Place in dry ingredients.
Pinch the pieces until they are very small and totally covered w/ the dry ingredients.




Step#3
Whisk milk and egg and pour into mixture.



Step#4
Drop onto baking sheet

Cook @ 350 for 12 minutes!

Jacked Up Pepper Chicken

Jacked~Up~Pepper Chicken

Ingredients
4 pcs Chicken leg/thigh quarters (pull off skin and most of the fat)
Grated Pepper~Jack Cheese
Real butter

Veggies:
1can tomatoes, sweet onion, celery, pablano pepper

Spices:
Salt, Black Pepper, Crushed Red Pepper, Cheyenne Pepper, Sweet Basil



Layer bottom of dish w/ chopped veggies and tomatoes



Place Chicken on top. Cover w/ seasonings and pats of butter



Cover w/ lid and Cook @ 350 for one hour





Sprinkle on Pepper~Jack cheese. Broil for 2 minutes or until all of cheese is melted!

Pork Chop Harvest

I saw this on Rachel Ray, but added gluten~free flour
and my own seasonings.
Very tasty!

Ingredients needed

Seasonings for chops: Paprika, Seasoned salt, Black pepper, McCormick Grill Mates


Pan grill chops (covered w/ lid) for 15 to 20 minutes in olive oil.
Continue turning and checking. No pink should remain in middle.
Chop 1 apple and  1 sweet onion. I left the pieces chunky.

Grill apples n onion in pork chop remains.




 Ingredients for gravy: apple cider vinegar, gluten~free flour, and chicken stock (bullion)



I used approximately 1 Tb of vinegar, 2 Tb of GF flour, 1 cup of chicken stock.
